Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Ingredients: Start by rinsing the baby potatoes and cutting them in half. Pat the steak cubes dry with a paper towel to ensure a good sear.

    Boil the Potatoes: In a large pot, bring salted water to a boil. Add the halved potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.

      Sear the Steak Bites: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the steak bites in a single layer (you may need to do this in batches). Season with salt and pepper. Sear for 2-3 minutes until browned, then flip and cook for another 2-3 minutes until they reach your desired doneness. Remove the steak from the skillet and set aside.

        Cook the Potatoes: In the same skillet, add the boiled potatoes. Cook for 5-7 minutes, stirring occasionally, until they start to turn golden brown.

          Make the Garlic Butter: Reduce the heat to low. In the same skillet, add the butter, minced garlic, thyme, and rosemary. Stir for about 30 seconds until fragrant.

            Combine and Serve: Add the steak bites back to the skillet with the garlic butter. Toss everything together to coat the steak and potatoes in the delicious garlic butter mixture. Cook for an additional minute to heat through.
