1 lb (450g) sirloin steak, cut into 1-inch cubes

1 lb (450g) baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)

2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes: Begin by boiling the halved baby potatoes in a pot of salted water for about 10-12 minutes until they're just tender but still firm. Drain and set aside.

    Cook the Steak: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the steak cubes in a single layer. Season with salt and pepper. Sear them for about 3-4 minutes on each side, or until desired doneness. Remove the steak from the pan and set aside.

      Sauté the Potatoes: In the same skillet, add another tablespoon of olive oil. Toss in the boiled potatoes and sauté for about 5-6 minutes, allowing them to develop a golden brown crust.

        Make the Garlic Butter: Lower the heat and melt 4 tablespoons of butter in the skillet with the potatoes. Add minced garlic, rosemary, and thyme. Stir to combine for about 1 minute until fragrant.

          Combine Steak and Potatoes: Return the cooked steak bites to the skillet and gently toss with the garlic butter mixture until everything is well-coated and heated through, about 2-3 minutes.
