Ingredients

4 medium potatoes, diced (Russet or Yukon Gold)

2 large carrots, sliced into rounds

2 medium zucchinis, sliced into half-moons

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or lightly grease it.

In a large mixing bowl, combine the diced potatoes, sliced carrots, and zucchini.

In a small bowl, whisk together the olive oil, minced garlic, oregano, thyme, smoked paprika, salt, and pepper until well combined.

Pour the olive oil mixture over the vegetables and toss until everything is evenly coated.

Spread the mixture in an even layer on the prepared baking sheet, ensuring the vegetables are not overcrowded for optimal roasting.

Roast in the preheated oven for 25-30 minutes, tossing halfway through, until the vegetables are tender and golden brown.

Remove the vegetables from the oven and let cool for a few minutes.

Garnish with fresh parsley before serving for an extra touch of freshness.
