Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons olive oil

2 tablespoons lemon juice

1 clove garlic, minced

1/2 teaspoon ground cumin

Salt, to taste

1/4 cup Greek yogurt

1/4 cup diced cucumber

1/4 cup diced tomatoes

1/4 cup kalamata olives, pitted and chopped

1/4 cup crumbled feta cheese

Fresh parsley, for garnish

Pita chips or veggie sticks, for serving

Instructions
 

In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, minced garlic, ground cumin, and salt. Process until smooth and creamy. You can add a little water if needed to reach desired consistency.

    Transfer the hummus to a large serving platter or bowl, creating a slight well in the center.

      In a separate bowl, combine the diced cucumber, tomatoes, chopped olives, and feta cheese. Toss gently to mix well.

        Spoon the vegetable and feta mixture into the well you created in the hummus.

          Drizzle the top with a little extra olive oil and sprinkle fresh parsley for garnish.
