1 lb ground turkey

2 large bell peppers (any color), diced

1 medium onion, chopped

3 cloves garlic, minced

1 can (15 oz) diced tomatoes (with juice)

1 cup corn (fresh or frozen)

1 tsp cumin

1 tsp smoked paprika

½ tsp chili powder (adjust to taste)

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro or parsley for garnish

Optional: Crumbled feta cheese for topping

Prep the Vegetables: Start by washing and chopping the bell peppers, onion, and garlic. Set aside.

    Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

      Sauté the Aromatics: Once the turkey is cooked through, add the chopped onion and minced garlic to the skillet. Sauté for 3-4 minutes until the onion is translucent.

        Add Peppers and Spices: Stir in the diced bell peppers, cumin, smoked paprika, and chili powder. Season with salt and pepper. Cook for another 5 minutes until the peppers start to soften.
