1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 cup onion, diced

2 cloves garlic, minced

1 cup bell peppers, diced (any color)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 tsp cumin

1 tsp smoked paprika

½ tsp chili powder

¼ tsp cayenne pepper (optional, for heat)

1 cup chicken broth

1 cup shredded cheese (cheddar or a blend)

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Ground Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onions and garlic; sauté for 2-3 minutes until softened. Add the ground turkey, cooking until browned and fully cooked, about 5-7 minutes. Season with salt, pepper, cumin, smoked paprika, chili powder, and cayenne pepper if using.

      Add Vegetables: Stir in the diced sweet potatoes, bell peppers, black beans, and corn. Mix well and pour in the chicken broth. Bring to a simmer and cover the skillet. Cook for about 10-15 minutes, or until the sweet potatoes are tender.

        Assemble the Casserole: Once the sweet potatoes are tender, transfer the mixture into a greased 9x13 inch baking dish. Evenly sprinkle shredded cheese on top.
