Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, chopped

1 green bell pepper, chopped

1 small onion, diced

3 cloves garlic, minced

1 tsp chili powder

1 tsp smoked paprika

½ tsp cumin

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro or parsley for garnish

½ cup low-sodium chicken broth (optional for moisture)

Instructions
 

Prep the Sweet Potatoes: In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10 minutes, stirring occasionally, until they start to soften.

    Cook the Ground Turkey: Push the sweet potatoes to the side of the skillet. Add the remaining tablespoon of olive oil to the cleared space, then add the ground turkey. Break it apart with a spatula, cooking until it is browned and cooked through, about 5-7 minutes.

      Add the Vegetables: Stir in the diced onion, chopped red and green bell peppers, and minced garlic. Cook for another 5-7 minutes until the onions are translucent and the peppers are tender.

        Season: Sprinkle in the chili powder, smoked paprika, cumin, and additional salt and pepper. Stir everything together until well combined. If the mixture looks too dry, add the chicken broth for added moisture, stirring to incorporate.

          Simmer: Reduce the heat to medium-low, cover the skillet, and cook for an additional 5 minutes to allow the flavors to meld together and the sweet potatoes to finish cooking through.

            Garnish and Serve: Once cooked, remove from heat and garnish with freshly chopped cilantro or parsley. Serve warm as a one-pan meal or with a side of greens.
