1 pound ground turkey

2 medium sweet potatoes, peeled and diced

1 bell pepper (any color), chopped

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon chili powder

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and a pinch of salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are tender and starting to caramelize. Remove the sweet potatoes from the skillet and set aside.

    Cook the Turkey: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and bell pepper, and sauté for about 3-4 minutes until softened. Then, add the minced garlic and cook for an additional 1 minute.

      Brown the Turkey: Add the ground turkey to the skillet, breaking it up with a spatula. Season with smoked paprika, cumin, chili powder, salt, and pepper. Cook until the turkey is no longer pink, about 5-7 minutes.

        Combine Everything: Once the turkey is cooked through, return the sautéed sweet potatoes back to the skillet. Stir in the black beans and corn. Cook for another 5 minutes, allowing all the flavors to meld together.

          Serve: Remove from heat and garnish with fresh cilantro. Serve hot with lime wedges on the side.
