Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 bell pepper, diced (any color)

1 small onion, diced

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp cumin

1/2 tsp chili powder (optional for heat)

Salt and pepper to taste

1 cup spinach (fresh or frozen)

2 tbsp olive oil

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prep the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for about 10-12 minutes, stirring occasionally, until they start to soften and brown slightly.

    Cook the Turkey: Push the sweet potatoes to one side of the skillet. Add the remaining olive oil to the cleared side. In the new space, add the diced onion and bell pepper, sautéing until they become translucent (about 3-4 minutes). Then, add the minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Stir the ground turkey into the skillet, breaking it up with a wooden spoon. Add the smoked paprika, cumin, chili powder (if using), salt, and pepper. Cook until the turkey is no longer pink, about 5-7 minutes.

        Add Spinach: Once the turkey is cooked, stir in the spinach and let it wilt for about 2 minutes. Mix everything together in the skillet and cook for an additional 2 minutes to let the flavors marry.

          Serve: Remove from heat, garnish with fresh cilantro or parsley if desired, and serve warm.
