2 lbs chicken thighs (bone-in, skin-on)

1 cup soy sauce (low sodium preferred)

1/2 cup brown sugar

1/4 cup rice vinegar

1/4 cup honey

4 cloves garlic (minced)

1 tablespoon fresh ginger (grated)

1 tablespoon sesame oil

1/2 teaspoon black pepper

1 green onion (sliced for garnish)

1 tablespoon sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large mixing bowl, whisk together the soy sauce, brown sugar, rice vinegar, honey, minced garlic, ginger, sesame oil, and black pepper until the sugar is fully dissolved. Add the chicken thighs to the bowl, making sure they are fully coated in the marinade. Cover and refrigerate for at least 2 hours, or ideally overnight for maximum flavor.

    Preheat the Oven: Preheat your oven to 375°F (190°C).

      Prepare for Baking: Take the marinated chicken thighs out of the refrigerator and transfer them to a large baking dish. Pour the marinade over the chicken to ensure it remains juicy during cooking.

        Bake the Chicken: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Baste the chicken with the sauce a couple of times during the last baking phase for extra flavor.

          Glaze It Up: If you'd like a caramelized finish, you can broil the chicken for 3-5 minutes after baking. Watch carefully to prevent burning!
