Hearty Irish Chicken Dhansak Curry

Ingredients
  

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

2 cups lentils (red or yellow), rinsed and drained

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece ginger, grated

2 green chilies, slit lengthwise (adjust to taste)

1 tsp turmeric powder

1 tsp cumin seeds

2 tsp garam masala

1 tbsp curry powder

1/2 tsp red chili powder (optional)

2 cups chicken broth or water

1 can (14 oz) coconut milk

2 large carrots, diced

1 bell pepper, chopped (any color)

3 tbsp vegetable oil

Salt and pepper to taste

Fresh coriander leaves for garnish

Juice of 1 lime or lemon

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with turmeric powder, salt, and pepper. Set aside for at least 20 minutes.

    Cook Lentils: In a large pot, add the lentils and pour in 2 cups of chicken broth or water. Bring to a boil, then lower the heat and let simmer for about 20-25 minutes until the lentils are soft. Drain and set aside.

      Sauté Aromatics: In a heavy-bottomed pan, heat the vegetable oil over medium heat. Add the cumin seeds and let them crackle. Then add the chopped onions and sauté until golden brown.

        Add Ginger, Garlic, and Chilies: Stir in the minced garlic, grated ginger, and slit green chilies. Cook for about 2-3 minutes until fragrant.

          Spice it Up: Sprinkle in the garam masala, curry powder, red chili powder (if using), and sauté for another minute, allowing the spices to bloom.

            Cook the Chicken: Add the marinated chicken pieces to the pan. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned.

              Combine Ingredients: Add the diced carrots and chopped bell pepper to the pan. Pour in the coconut milk and the cooked lentils, stirring well to combine everything.

                Simmer: Allow the mixture to simmer gently for about 15 minutes, or until the chicken is cooked through and the vegetables are tender. Adjust the seasoning with salt and pepper to your taste.

                  Finish with Freshness: Remove from heat and stir in the lime juice. Garnish with freshly chopped coriander leaves.
