Ingredients
  

1 cup green or brown lentils, rinsed and drained

2 large potatoes, diced (about 2 cups)

1 medium onion, chopped

2 carrots, diced

2 celery stalks, diced

4 cloves garlic, minced

6 cups vegetable broth

1 can (14.5 oz) diced tomatoes, with juice

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Optional: 1 tablespoon lemon juice

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, or until the veggies start to soften.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced potatoes, lentils, diced tomatoes (with juice), vegetable broth, thyme, smoked paprika, and bay leaf. Stir everything together.

        Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 30-35 minutes or until the lentils and potatoes are tender.

          Remove the bay leaf and season with salt, pepper, and lemon juice (if using) to taste.

            For a smoother texture, you can use an immersion blender to puree a portion of the soup right in the pot or blend a couple of cups in a blender and then return to the pot.

              Serve hot, garnished with fresh parsley. Enjoy this comforting bowl of hearty soup!
