Ina Garten’s Summer Garden Pasta Is (Almost) Too Good to Be True

Ingredients
  

1 pound of spaghetti or your favorite pasta

2 tablespoons olive oil

4 cloves garlic, minced

2 cups cherry tomatoes, halved

1 zucchini, diced

1 yellow squash, diced

1 bell pepper, diced (red or yellow)

1 cup fresh basil leaves, roughly chopped

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/2 cup grated Parmesan cheese, plus more for serving

Zest and juice of 1 lemon

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.

      Add the Garden Veggies: Add the cherry tomatoes, zucchini, yellow squash, and bell pepper to the skillet. Sauté for about 5-7 minutes until the vegetables are tender and the tomatoes have started to burst.

        Combine Pasta and Vegetables: Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together, adding a splash of reserved pasta water if needed to combine everything.

          Enhance the Flavor: Stir in the chopped basil, red pepper flakes (if using), lemon zest, and lemon juice. Season with salt and pepper to taste.

            Cheesy Goodness: Remove the skillet from the heat and mix in the grated Parmesan cheese, allowing it to melt into the pasta.

              Serve: Plate the pasta into bowls, finishing with an extra sprinkle of Parmesan cheese, some fresh basil leaves, and additional lemon zest if desired. Enjoy your bright, summery dish!
