Ingredients

2 cups apple cider

1 cup all-purpose flour

1 cup whole wheat flour

1 cup granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

2 large eggs

1/4 cup vegetable oil

1 teaspoon vanilla extract

1/4 cup unsalted butter, melted (for coating)

1/2 cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Instructions

Reduce the Cider: In a medium saucepan, bring the apple cider to a boil over medium-high heat. Once boiling, reduce the heat and let it simmer until reduced to about 3/4 cup (about 15-20 minutes). Remove from heat and let cool slightly.

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a donut pan with cooking spray or lightly with oil.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until combined.

Combine Wet Ingredients: In another bowl, beat the eggs, then add the reduced apple cider, vegetable oil, and vanilla extract. Mix well until combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold until just combined, ensuring not to overmix. The batter will be thick.

Fill the Donut Pan: Using a piping bag or a spoon, fill each cavity of the donut pan about 3/4 full with the batter.

Bake the Donuts: Bake in the preheated oven for 12-15 minutes, or until the donuts spring back when lightly touched and are golden brown.

Cool and Coat: Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack. While they cool, mix the granulated sugar and cinnamon for the coating in a shallow bowl.

Butter and Coat: Dip each warm donut into the melted butter before rolling it in the cinnamon-sugar mixture until fully coated.

Serve and Enjoy: Let the donuts cool slightly before serving. Enjoy them fresh with a cup of hot apple cider or your favorite beverage!
