2 cups rolled oats

2 medium apples, diced (preferably Granny Smith or Honeycrisp)

2 cups unsweetened almond milk (or any milk of your choice)

1/4 cup honey or maple syrup (adjust for sweetness)

1/2 cup unsweetened applesauce

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans work well)

1/4 cup raisins or dried cranberries (optional)

Fresh apple slices and a sprinkle of cinnamon for topping (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a baking dish (9x9 inches or similar) with cooking spray or a small amount of oil.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, and salt. Stir until well blended.

      Combine Wet Ingredients: In a separate bowl, mix together the almond milk, honey or maple syrup, applesauce, and vanilla extract. Whisk until smooth and well integrated.

        Mix Everything Together: Add the diced apples to the dry oat mixture, then pour the wet mixture over the oats and apples. Stir until everything is coated evenly. Fold in the chopped nuts and raisins or cranberries if using.

          Transfer to Baking Dish: Pour the oat mixture into the greased baking dish, spreading it evenly. Top with fresh apple slices and a light sprinkle of cinnamon if desired.

            Bake: Place the dish in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown and the mixture is set.
