1 tsp baking powder

1 tsp baking soda

½ tsp salt

2 tsp ground cinnamon

½ cup unsweetened applesauce

½ cup granulated sugar

¼ cup brown sugar, packed

1 large egg

⅓ cup vegetable oil

1 tsp vanilla extract

1 cup peeled and diced apples (such as Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

1 tbsp granulated sugar (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining it with paper liners or greasing it lightly.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

      Mix Wet Ingredients: In another bowl, mix the applesauce, granulated sugar, brown sugar, egg, vegetable oil, and vanilla extract until well combined.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir just until combined. Do not overmix; it’s okay if there are a few lumps.
