Ingredients

1 lb large shrimp, peeled and deveined

1/4 cup fresh lime juice (about 2-3 limes)

1/4 cup tequila (optional)

1/4 cup orange liqueur (like Cointreau or Triple Sec)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into wedges

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Marinate the Shrimp: In a medium bowl, whisk together lime juice, tequila, orange liqueur, olive oil, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper. Add the shrimp to the marinade, making sure they are well coated. Cover and refrigerate for at least 30 minutes, but no longer than 2 hours to maintain the shrimp’s tenderness.

Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. If using metal skewers, you can skip this step.

Assemble the Kabobs: On each skewer, alternate threading the marinated shrimp with the bell pepper and onion pieces, creating a colorful pattern. Aim for about 4-5 shrimp per skewer, interspersed with vegetables.

Preheat the Grill: Preheat your grill to medium-high heat, about 400°F (200°C). Lightly oil the grill grates to prevent sticking.

Grill the Kabobs: Place the kabobs on the grill and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque, and the vegetables have a nice char. Be careful not to overcook the shrimp, as they can become tough.

Serve: Remove the kabobs from the grill and let them rest for a minute. Garnish with fresh cilantro and serve with lime wedges on the side. Enjoy your Juicy Margarita Grilled Shrimp Kabobs with your favorite sides!
