Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or pork)

1/2 cup cooked rice (white or brown)

1/4 cup green onions, finely chopped

2 cloves garlic, minced

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp ginger, grated

1 tbsp brown sugar

1 tsp black pepper

1 egg, beaten

1/4 cup panko breadcrumbs

Sesame seeds (for garnish)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tbsp sriracha (adjust based on spice preference)

1 tsp lime juice

1 tsp soy sauce

1/2 tsp garlic powder

Optional: chopped cilantro for garnish

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Meatball Mixture:

      - In a large mixing bowl, combine ground beef (or pork), cooked rice, green onions, minced garlic, soy sauce, sesame oil, grated ginger, brown sugar, black pepper, beaten egg, and panko breadcrumbs.

        - Mix until all ingredients are well incorporated, but do not overmix to keep the meatballs tender.

          Form the Meatballs:

            - Using your hands, roll the mixture into 1-inch meatballs and place them on the prepared baking sheet, leaving some space between each meatball.

              Bake the Meatballs:

                - Bake in the preheated oven for 15-20 minutes, or until they are cooked through and golden brown. You can also broil them for an additional 2-3 minutes at the end for extra caramelization.

                  Prepare the Spicy Mayo Dip:

                    - While the meatballs are baking, mix together mayonnaise, sriracha, lime juice, soy sauce, and garlic powder in a small bowl until smooth and well-combined. Adjust seasoning and spiciness to taste.

                      Serve:

                        - Once the meatballs are done, remove them from the oven and let them cool slightly. Garnish with sesame seeds.

                          - Serve the meatballs warm with the spicy mayo dip on the side. You can also sprinkle with additional chopped green onions or cilantro if desired.
