8 oz (225g) egg noodles

1 lb (450g) chicken breast, diced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

1 red bell pepper, diced

1 green bell pepper, diced

1/2 cup unsalted peanuts

3-4 dried red chilies (adjust based on spice preference)

2 green onions, chopped

Salt and pepper to taste

Sesame seeds for garnish (optional)

Instructions
 

Cook the Noodles: Bring a large pot of water to a boil and cook the egg noodles according to package instructions. Drain and set aside.

    Marinate the Chicken: In a bowl, combine diced chicken with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and a pinch of salt and pepper. Mix well and let it marinate for 15-20 minutes.

      Prepare the Sauce: In a separate bowl, whisk together the remaining soy sauce, oyster sauce, rice vinegar, and a splash of water to form the stir-fry sauce. Set aside.

        Stir-fry the Chicken: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until it’s golden and cooked through (around 5-7 minutes). Remove the chicken from the skillet and set it aside.

          Add Aromatics and Veggies: In the same skillet, add minced garlic, grated ginger, dried red chilies, and diced bell peppers. Stir-fry for about 2-3 minutes until the vegetables are slightly tender.

            Combine Everything: Return the cooked chicken to the skillet. Add the cooked noodles and pour in the prepared stir-fry sauce. Toss everything together gently to combine, ensuring the noodles are evenly coated.

              Add Peanuts and Green Onions: Gently fold in the unsalted peanuts and chopped green onions. Stir briefly to warm them through.

                Serve: Remove from heat, garnish with sesame seeds if desired, and serve hot.
