Ingredients
  

8 oz whole wheat pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper, diced (any color)

1/4 cup red onion, finely chopped

1/2 cup fresh basil leaves, chopped

1/4 cup olive oil

Zest and juice of 1 large lemon

1 tsp garlic powder

Salt and pepper, to taste

Optional: 1/4 cup nutritional yeast (for a cheesy flavor)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add whole wheat pasta and cook according to package directions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prep the Vegetables: While the pasta is cooking, prepare the vegetables. In a large bowl, combine the halved cherry tomatoes, diced cucumber, diced bell pepper, and chopped red onion.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon zest, lemon juice, garlic powder, salt, and pepper. Adjust seasoning according to your preference.

        Combine: Add the cooked pasta to the bowl of vegetables. Pour the dressing over the pasta and vegetables. Toss gently until everything is well coated.

          Add Basil & Nutritional Yeast: Fold in the fresh basil leaves and sprinkle nutritional yeast if using. Mix gently to combine.

            Chill & Serve: For best flavor, refrigerate the salad for at least 30 minutes to let the flavors meld. Serve cold or at room temperature, garnished with extra basil if desired.
