Lemon Garlic Shrimp Pasta With Spinach

8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

3 cups fresh spinach, roughly chopped

4 cloves garlic, minced

1 medium lemon (juice and zest)

1/4 cup extra virgin olive oil

1/2 tsp red pepper flakes (optional for heat)

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Prepare the Shrimp: In a large skillet over medium-high heat, add the extra virgin olive oil. Once hot, add minced garlic and sauté for about 30 seconds until fragrant.

      Cook the Shrimp: Add the shrimp to the skillet in a single layer. Season with salt, pepper, and red pepper flakes (if using). Cook for 2-3 minutes on one side until they start to turn pink, then flip and cook for an additional 1-2 minutes until fully cooked. Remove shrimp from the skillet and set aside.

        Sauté Spinach: In the same skillet, add the chopped spinach and sauté for 2-3 minutes until just wilted.

          Combine Flavors: Return the cooked shrimp to the skillet with the spinach. Add the cooked pasta, lemon juice, lemon zest, and reserved pasta water. Toss everything together gently to combine. Add more olive oil if needed for moisture.

            Finish & Garnish: Remove from heat and fold in grated Parmesan cheese. Taste and adjust seasoning with salt and pepper if necessary. Serve immediately, garnishing with fresh parsley on top.
