Macro-Friendly, High Protein Sheet Pan Breakfast Burritos

Ingredients
  

6 large eggs

½ cup egg whites

1 cup cooked black beans (drained and rinsed)

1 cup diced bell peppers (mixed colors)

1 cup fresh spinach, chopped

1 cup cooked turkey sausage, crumbled (or any protein of choice)

1 cup shredded low-fat cheese (like mozzarella or cheddar)

6 whole wheat tortillas (burrito size)

1 tsp olive oil

1 tsp ground cumin

1 tsp chili powder

Salt and pepper, to taste

Salsa and avocado, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the large eggs, egg whites, cumin, chili powder, salt, and pepper until well combined.

      Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add the diced bell peppers and sauté for about 3-4 minutes until softened. Stir in the chopped spinach and cook until wilted, about 1-2 minutes. Remove from heat.

        Combine Ingredients: In the large bowl with the egg mixture, add the cooked black beans, sautéed peppers and spinach, and crumbled turkey sausage. Mix well until everything is evenly coated.

          Bake the Egg Mixture: Pour the mixture onto the prepared sheet pan, spreading it out evenly. Bake in the preheated oven for 15-20 minutes, or until the eggs are set and lightly browned.

            Assemble the Burritos: Once the egg mixture is done, remove it from the oven and let it cool for a minute. Sprinkle the shredded cheese over the egg mixture, then cut it into equal pieces or squares (about 6).

              Wrap the Burritos: Take each whole wheat tortilla and place a piece of the egg mixture in the center. Fold in the sides and roll up tightly to form a burrito. Repeat with all tortillas.

                Optional Final Bake: For a crispier burrito, you can place the wrapped burritos seam-side down on the baking sheet and bake them at 400°F (200°C) for an additional 5-10 minutes until golden.

                  Serve: Cut burritos in half and serve warm with salsa and avocado if desired.
