Ingredients

1 can (20 oz) crushed pineapple, drained

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy cream

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

1 cup coconut flakes (sweetened or unsweetened based on preference)

Fresh pineapple chunks, for garnish

Whipped cream, for serving (optional)

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are well coated with butter. Press the mixture into the bottom of a 9x9 inch square dish to form an even layer for the crust.

Make the Cream Cheese Mixture: In a separate large bowl, use an electric mixer to beat the softened cream cheese until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until fully combined.

Whip the Heavy Cream: In another bowl, whip the heavy cream until stiff peaks form. This will add a light texture to the dessert.

Combine Mixtures: Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream too much. Once combined, fold in the drained crushed pineapple and shredded coconut until evenly distributed.

Assemble the Dessert: Pour the pineapple cream mixture over the graham cracker crust, spreading it evenly with a spatula. Cover the dish with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or overnight for optimal set.

Serve: Once set, cut into squares and serve chilled. Optional: Top with a dollop of whipped cream and fresh pineapple chunks for an added touch.
