4 boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups low-sodium chicken broth

1 cup honey BBQ sauce

1 medium onion, diced

1 bell pepper (red or green), diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

1 cup frozen corn (optional)

Fresh cilantro or parsley for garnish

Sear the Chicken: In a large skillet or pan, heat a tablespoon of olive oil over medium-high heat. Season the chicken thighs with salt, pepper, and smoked paprika. Add the chicken to the pan and sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the pan and set aside.
