12 oz (340g) pasta (such as spaghetti or fettuccine)

2 large onions, thinly sliced

4 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 cup grated Gruyère cheese

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Onions: In a large pot or Dutch oven, heat olive oil and butter over medium heat. Add the sliced onions and cook, stirring frequently, for about 15-20 minutes or until they are caramelized and golden brown.

    Add Garlic and Thyme: Stir in the minced garlic and dried thyme, cooking for an additional minute until fragrant.

      Deglaze the Pot: Pour in 1 cup of vegetable broth, scraping the bottom of the pot to release any flavorful bits. Allow it to simmer for a couple of minutes.

        Add Pasta and Remaining Broth: Add the uncooked pasta, along with the remaining vegetable broth. Bring the mixture to a boil, then reduce heat to medium-low. Cover and simmer for about 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

          Stir in Cream and Cheeses: Once the pasta is cooked, lower the heat and stir in the heavy cream, Gruyère cheese, and Parmesan cheese. Mix well until the cheeses are melted and the sauce is creamy. Season with salt and pepper to taste.
