1 lb (450g) boneless, skinless chicken thighs, diced

1 tablespoon olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 lemon (zest and juice)

4 cups chicken broth

16 oz (450g) gnocchi

1 cup heavy cream

2 cups fresh spinach

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken thighs and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.

    Cook the Aromatics: In the same pot, add the minced garlic, dried thyme, and dried oregano. Sauté for about 1-2 minutes until fragrant.

      Add Liquid Ingredients: Pour in the chicken broth, scraping up any brown bits from the bottom of the pot. Add the lemon zest and juice, and bring the mixture to a boil.

        Cook the Gnocchi: Once boiling, add the gnocchi to the pot. Cook according to package instructions, usually about 2-3 minutes until they float to the top.
