Ingredients
  

4 salmon fillets (about 6 oz each)

1 cup orzo pasta

2 cups low-sodium chicken broth (or water)

1 medium onion, finely chopped

3 cloves garlic, minced

1 medium lemon (zested and juiced)

1 cup cherry tomatoes, halved

2 cups fresh spinach

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1 teaspoon dried oregano

Prepare the Salmon: Season the salmon fillets with salt, pepper, and dried oregano. Set aside.

    Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for 1 more minute until fragrant.

      Cook the Orzo: Stir in the orzo pasta and toast it for 2 minutes in the skillet. Then, pour in the chicken broth and bring to a gentle simmer. Cook the orzo according to package instructions, usually about 8-10 minutes, or until al dente.

        Add Lemon and Vegetables: Once the orzo is cooked, stir in the lemon zest, lemon juice, cherry tomatoes, and fresh spinach. Cook for an additional 2-3 minutes, allowing the spinach to wilt and the tomatoes to warm through.

          Cook the Salmon: In a separate area of the skillet, push the orzo mixture to the side and add the seasoned salmon fillets. Cook for about 4-5 minutes on each side, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

            Serve: Once everything is cooked, gently fold the orzo and vegetables around the salmon in the skillet. Garnish with freshly chopped parsley before serving.
