Ingredients
  

2 (6-ounce) salmon fillets, skin-on

1 cup orzo pasta

2 cups vegetable broth

1 lemon (zest and juice)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups baby spinach

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Orzo: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the orzo and toast for 1-2 minutes, stirring frequently.

    Add Broth: Pour in the vegetable broth and bring it to a gentle boil. Reduce the heat to medium-low, cover the skillet, and let the orzo cook for about 10-12 minutes, stirring occasionally, until tender and most of the broth is absorbed.

      Prepare the Salmon: While the orzo is cooking, season the salmon fillets with salt, pepper, and dried oregano. In another pan, heat the remaining olive oil over medium-high heat. Place the salmon skin-side down and cook for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for another 3-4 minutes or until salmon is cooked to your liking.

        Combine Ingredients: Once the orzo is cooked, remove it from heat and stir in lemon zest, lemon juice, cherry tomatoes, and baby spinach. Gently fold the mixture together and allow the spinach to wilt slightly.

          Serve: Plate the lemon orzo mixture and top it with the seared salmon fillets. Garnish with chopped parsley and additional lemon wedges if desired.
