Ingredients
  

8 oz whole wheat pasta (spaghetti or fettuccine)

2 cups fresh basil leaves

1/3 cup pine nuts (toasted)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 cup extra virgin olive oil

Salt and pepper to taste

2 chicken breasts (boneless and skinless)

1 tbsp olive oil (for grilling)

1 lemon (juiced)

Cherry tomatoes (for garnish, optional)

Additional basil leaves (for garnish, optional)

Instructions
 

Cook the Pasta:

    - In a large pot, bring salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

      Prepare the Pesto:

        - In a food processor, combine the basil leaves, toasted pine nuts, Parmesan cheese, and minced garlic. Pulse until finely chopped.

          - With the food processor running, gradually add the olive oil until a smooth consistency is achieved. Season with salt and pepper to taste. If the pesto is too thick, you can add a little reserved pasta water to achieve your desired consistency.

            Grill the Chicken:

              - Preheat a grill or grill pan over medium-high heat. While it heats, brush the chicken breasts with olive oil, lemon juice, and a sprinkle of salt and pepper.

                - Once the grill is hot, add the chicken breasts and cook for about 6-7 minutes per side, or until fully cooked and juices run clear (internal temperature should reach 165°F). Remove from heat and let rest for a few minutes before slicing into strips.

                  Combine Ingredients:

                    - In a large mixing bowl, combine the cooked pasta and pesto, tossing to ensure the pasta is well coated. If needed, add a little reserved pasta water to loosen the sauce.
