Ingredients

4 slices of sourdough bread

4 tablespoons of butter, softened

1 cup shredded mozzarella cheese

½ cup marinara sauce (plus extra for dipping)

¼ cup sliced pepperoni

¼ cup chopped bell peppers

¼ cup sliced black olives

½ teaspoon dried Italian herbs (oregano, basil, thyme)

1 tablespoon grated Parmesan cheese

Salt and pepper to taste

Instructions

Prepare the Bread: Spread a thin layer of butter on one side of each slice of sourdough bread. This will help achieve that golden, crispy exterior.

Assemble the Sandwich: On the unbuttered side of two slices, add a generous portion of shredded mozzarella cheese. Layer on a spoonful of marinara sauce, followed by the pepperoni, bell peppers, and black olives. Sprinkle dried Italian herbs and Parmesan cheese over the toppings, then season with salt and pepper.

Top the Sandwich: Place the remaining two slices on top, buttered side up. Press down gently to help meld the ingredients.

Grill the Sandwich: Preheat a non-stick skillet or griddle over medium heat. Carefully place the assembled sandwiches in the skillet. Cook for about 4-5 minutes, or until the bottom is golden brown.

Flip and Finish: Carefully flip the sandwiches over and cook for an additional 4-5 minutes, pressing down with a spatula to ensure melting of the cheese and crispiness of the bread.

Serve: Once both sides are golden and the cheese is melted, remove the sandwiches from the skillet. Slice them diagonally and serve hot with extra marinara sauce on the side for dipping.
