Quick & Easy Homemade Butter Chicken

500g boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons ginger-garlic paste

2 teaspoons ground cumin

2 teaspoons garam masala

1 teaspoon turmeric powder

1 teaspoon red chili powder (adjust for spice preference)

4 tablespoons butter (divided)

1 large onion, finely chopped

1 can (400g) crushed tomatoes

1 cup heavy cream

Salt to taste

Fresh cilantro for garnish

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the yogurt, lemon juice, ginger-garlic paste, cumin, garam masala, turmeric, red chili powder, and salt. Add the chicken pieces and mix well. Cover and marinate for at least 30 minutes (or up to overnight in the fridge for best flavor).

    Cook the Chicken: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the marinated chicken pieces (discard excess marinade) and sauté until golden brown and cooked through, about 8-10 minutes. Remove the chicken and set aside.

      Prepare the Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Sauté the chopped onion until translucent, about 5 minutes. Then, add the crushed tomatoes and cook for an additional 5-7 minutes, stirring occasionally.

        Combine Chicken and Sauce: Add the cooked chicken back to the skillet with the tomato sauce. Stir well to combine. Pour in the heavy cream and let it simmer for about 10 minutes, allowing the flavors to meld together.

          Garnish and Serve: Taste and adjust seasoning if needed. Garnish with fresh cilantro before serving. Serve hot with steamed rice or naan.
