2 cups sushi rice

2 ½ cups water

1 tablespoon rice vinegar

1 tablespoon sugar

1 teaspoon salt

8 ounces sushi-grade salmon, thinly sliced

1 avocado, sliced

2 tablespoons soy sauce

1 tablespoon sriracha (optional)

1 tablespoon sesame oil

1 tablespoon furikake seasoning

1 cup tempura batter (store-bought or homemade)

Oil for frying

Fresh cilantro leaves for garnish

Lime wedges for serving

Prepare the Sushi Rice: Rinse sushi rice under cold water until the water runs clear. In a pot, combine rinsed rice and water, then bring to a boil. Once boiling, reduce to low heat, cover, and simmer for 18-20 minutes until water is absorbed. Remove from heat and let sit, covered, for another 10 minutes.

    Season the Rice: In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice. Allow the rice to cool to room temperature.

      Shape the Rice: Once cooled, wet your hands with water to prevent sticking. Take about 2 tablespoons of rice and shape it into compact, rectangular rice cakes. Repeat until all rice is formed.

        Fry the Rice Cakes: Heat oil in a deep skillet or frying pan over medium-high heat. Once hot, carefully fry the rice cakes in batches until golden and crispy, about 2-3 minutes per side. Drain on paper towels.

          Prepare the Salmon Topping: While the rice cakes are frying, drizzle sliced salmon with soy sauce, sriracha (if using), and sesame oil. Toss gently to marinate.

            Assemble the Bites: On each crispy rice cake, place a slice of marinated salmon and a slice of avocado. Sprinkle furikake seasoning over the top for added flavor.
