Savory Japanese BBQ Chicken Fried Rice Extravaganza

Ingredients
  

2 cups cooked jasmine rice (preferably day-old)

1 lb boneless skinless chicken thighs, cut into bite-sized pieces

2 tablespoons soy sauce

2 tablespoons teriyaki sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

3 green onions, chopped (whites and greens separated)

1 medium carrot, diced

1 red bell pepper, diced

1 cup frozen peas

2 cloves garlic, minced

1 teaspoon ginger, grated

2 large eggs, beaten

Salt and pepper to taste

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the chicken pieces, soy sauce, and teriyaki sauce. Let marinate for at least 15 minutes.

    Prepare the Rice: If using fresh rice, spread it on a baking sheet to cool and dry slightly. This prevents the fried rice from becoming mushy.

      Cook Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until golden brown and cooked through, about 6-8 minutes. Remove from skillet and set aside.

        Sauté Vegetables: In the same skillet, add sesame oil. Sauté the diced carrots and red bell pepper for about 3-4 minutes until they soften. Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.

          Add Rice: Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables and cook for about 2-3 minutes until heated through.

            Scramble Eggs: Push the rice mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble until cooked. Slowly mix the scrambled eggs into the rice.

              Combine Chicken and Peas: Add the cooked chicken back to the skillet along with the frozen peas and the white parts of the green onions. Stir everything together and cook for another 2-3 minutes until peas are heated.

                Season and Serve: Season the fried rice with salt and pepper to taste. Garnish with the green onion greens and a sprinkle of sesame seeds before serving.
