Sheet Pan Sausage and Veggies

Ingredients
  

1 pound Italian sausage links (sweet or spicy)

2 bell peppers (one red, one yellow), sliced

1 large zucchini, sliced into half-moons

1 red onion, cut into wedges

1 cup cherry tomatoes, halved

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, combine the sliced bell peppers, zucchini, red onion, cherry tomatoes, and minced garlic.

      Drizzle the olive oil over the vegetables and sprinkle with oregano, smoked paprika, salt, and pepper. Toss everything until evenly coated.

        Spread the vegetable mixture evenly on a large sheet pan.

          Add the Italian sausage links on top of the veggies, making sure they are spaced out.

            Place the sheet pan in the preheated oven and roast for 25-30 minutes, or until the sausage is cooked through (internal temperature of 160°F) and the vegetables are tender and slightly caramelized.

              Once cooked, remove from the oven and let cool for a couple of minutes. Slice the sausage into bite-sized pieces if desired.
