Instructions

Prepare the Shrimp:

    - In a bowl, combine olive oil, chili powder, paprika, garlic powder, lime juice, salt, and pepper.

      - Add the shrimp to the marinade and toss to coat. Let it sit while you prepare the other components.

        Make the Mango Salsa:

          - In a separate bowl, combine diced mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, and salt. Mix gently and set aside to let the flavors meld.

            Prepare the Lime-Chili Sauce:

              - In a small bowl, whisk together Greek yogurt, lime juice, chili powder, honey (if using), and a pinch of salt until smooth. Adjust seasoning to taste and set aside.

                Cook the Shrimp:

                  - Heat a skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.

                    Assemble the Bowls:

                      - In serving bowls, add a base of cooked rice or quinoa. Top with cooked shrimp, diced avocado (drizzled with lime juice and seasoned), and a generous scoop of mango salsa.

                        Drizzle with Lime-Chili Sauce:

                          - Finally, drizzle the lime-chili sauce over the top of each bowl and add extra cilantro for garnish. Serve with lime wedges on the side.
