Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

Ingredients
  

For the Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1 small red onion, finely chopped

1 jalapeño, chopped (seeds removed for less heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

For the Lime-Chili Sauce:

1/2 cup Greek yogurt

2 tablespoons mayonnaise

Juice of 1 lime

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt, to taste

For the Bowl:

2 cups cooked quinoa or rice

1-2 avocados, sliced

1 cup cherry tomatoes, halved

1 cup shredded lettuce (optional)

Instructions
 

Cook the Shrimp:

    - In a large bowl, combine olive oil, chili powder, garlic powder, smoked paprika, salt, pepper, and lime juice. Add the shrimp and toss to coat evenly.

      - Heat a grill or skillet over medium-high heat. Cook the shrimp for about 2-3 minutes on each side or until they are pink and opaque. Remove from heat and set aside.

          - In a medium bowl, mix together the diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Set aside to let the flavors meld.
