Skillet Banana Fritters

Ingredients
  

2 ripe bananas, mashed

1 cup all-purpose flour

1/4 cup sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 tsp cinnamon

1/2 cup milk

1 large egg

1 tsp vanilla extract

1/4 cup chopped walnuts or pecans (optional)

2 tablespoons vegetable oil for frying

Powdered sugar (for dusting)

Honey or maple syrup (for drizzling)

Instructions
 

In a mixing bowl, combine the mashed bananas, flour, sugar, baking powder, baking soda, salt, and cinnamon. Mix well until blended.

    In another bowl, whisk together the milk, egg, and vanilla extract until smooth. Slowly add the wet ingredients to the dry ingredients, stirring until just combined. If using, fold in the chopped nuts.

      Heat a skillet over medium heat and add 1 tablespoon of vegetable oil, ensuring it coats the bottom of the skillet.

        Once the oil is hot, drop spoonfuls of the batter onto the skillet, leaving enough space between each fritter to allow for spreading.

          Cook for about 2-3 minutes on one side, or until bubbles start to form on the surface and the edges look set. Carefully flip the fritters and cook for an additional 2-3 minutes until golden brown.

            Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb any excess oil. Repeat with the remaining batter, adding more oil as needed.

              Dust the warm fritters with powdered sugar and serve immediately, drizzled with honey or maple syrup.
