4 boneless, skinless chicken thighs

1 can (14 oz) coconut milk

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 red bell pepper, diced

2 fresh red chili peppers, sliced (adjust for heat preference)

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 tablespoon lime juice

Salt and pepper, to taste

Fresh cilantro, for garnish

Cooked white rice or quinoa, for serving

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the chicken thighs with salt, pepper, and lime juice. Allow to marinate for at least 30 minutes for maximum flavor.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic, diced red bell pepper, and sliced chili peppers. Sauté for another 3-5 minutes until everything is fragrant.

      Add Spices: Sprinkle the ground cumin and smoked paprika over the mixture, stirring to incorporate well. Cook for an additional 2 minutes.
