Spicy garlic noodles

8 oz (225g) fresh lo mein noodles (or spaghetti)

3 tablespoons vegetable oil

6 cloves garlic, minced

1 tablespoon fresh ginger, minced

1-2 teaspoons red pepper flakes (adjust to taste)

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon chili garlic sauce

1 tablespoon sesame oil

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Fresh cilantro leaves (for garnish)

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a boil. Add the lo mein noodles and cook according to package instructions until al dente, usually about 3-5 minutes. Drain and set aside.

    Prepare the Sauce: In a small bowl, mix together the soy sauce, oyster sauce, chili garlic sauce, and sesame oil. Set aside.

      Sauté Garlic and Ginger: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant but not browned.

        Add Heat: Stir in the red pepper flakes and cook for an additional 30 seconds.

          Combine Noodles: Add the cooked noodles to the skillet, tossing them with the garlic and ginger until well combined. Pour the sauce over the noodles, tossing to coat evenly.

            Finish and Serve: Stir-fry the noodles for another 2-3 minutes until everything is heated through. Remove from heat, garnish with chopped green onions, sesame seeds, and fresh cilantro leaves. Serve hot.
