1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 red bell pepper, diced

1/2 red onion, finely chopped

1 avocado, diced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1 cup shredded cheddar cheese

1/4 cup lime juice

2 tablespoons olive oil

1 tablespoon honey

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Tortilla chips or strips for serving (optional)

Instructions
 

In a large mixing bowl, combine the cooked shredded chicken, black beans, corn, red bell pepper, red onion, avocado, cherry tomatoes, and chopped cilantro.
