1 lb flank steak, thinly sliced

1 tablespoon olive oil

1 onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

2 cups frozen French fries

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper, to taste

1 cup shredded cheese (cheddar or Monterey Jack)

4 large flour tortillas

Fresh cilantro, for garnish

Salsa or hot sauce, for serving (optional)

Instructions
 

Cook the Fries: Preheat your oven and bake the frozen French fries according to package instructions until golden and crispy. Once done, set them aside.

    Prepare the Steak: In a large skillet, heat olive oil over medium-high heat. Add the sliced flank steak and season with smoked paprika, cumin, salt, and pepper. Sear the steak for about 3-4 minutes until browned but slightly pink in the middle. Remove from the skillet and let it rest while you prepare the veggies.

      Sauté the Veggies: In the same skillet, add a bit more olive oil if needed. Add diced onion and bell pepper; sauté until soft and fragrant, about 5-7 minutes. Add minced garlic in the last minute of cooking.

        Combine Ingredients: Return the cooked steak to the skillet with the sautéed veggies. Stir in the crispy French fries and half of the shredded cheese. Mix everything well to ensure even distribution.

          Assemble the Burritos: Lay a large tortilla flat on a clean surface. Spoon a generous amount of the steak and fry mixture onto the center of the tortilla. Top with a sprinkle of remaining cheese, and fold in the sides before rolling the burrito up tightly.

            Toast the Burritos: In the same skillet, add a bit of oil and place the rolled burritos seam-side down. Cook for about 2-3 minutes on each side until golden brown and crispy.

              Serve: Remove the burritos from the skillet, slice in half if desired, and garnish with fresh cilantro. Serve with salsa or hot sauce on the side.
