1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup jasmine rice, rinsed

2 cups chicken broth

1/4 cup soy sauce

2 tablespoons honey

2 garlic cloves, minced

1-inch piece of ginger, grated

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1/2 cup green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt and pepper, to taste

Vegetables of choice (e.g., steamed broccoli, snap peas, or carrots)

Instructions
 

Cook the Rice: In a medium saucepan, combine the rinsed jasmine rice with chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquids are absorbed. Fluff with a fork and set aside.

    Prepare the Sauce: In a small bowl, whisk together the soy sauce, honey, minced garlic, grated ginger, sesame oil, rice vinegar, and cornstarch slurry. Set aside.

      Cook the Chicken: In a large skillet over medium-high heat, add a little oil and the chicken pieces. Season with salt and pepper. Cook until browned on all sides, about 6-7 minutes.
