Ingredients

For the Fruit Filling:

2 cups fresh strawberries, hulled and sliced

2 cups fresh peaches, peeled and sliced (about 3 medium peaches)

1/2 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1/2 teaspoon cinnamon

For the Crisp Topping:

1 cup rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 cup cold unsalted butter, cut into small cubes

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/4 cup chopped nuts (optional, such as pecans or walnuts)

Instructions

Prepare the Fruit Filling:

    - In a large bowl, combine the sliced strawberries and peaches.

      - Add the granulated sugar, lemon juice, vanilla extract, cornstarch, and cinnamon. Toss gently until the fruit is well-coated.

        - Transfer the fruit mixture into a greased 9x13 inch baking dish.

          Make the Crisp Topping:

            - In a separate bowl, combine the rolled oats, flour, brown sugar, salt, and cinnamon.

              - Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs.

                - If desired, fold in the chopped nuts for added texture.

                  Assemble the Crisp:

                    - Evenly sprinkle the crisp topping over the fruit filling in the baking dish.

                      Bake:

                        - Preheat your oven to 350°F (175°C).

                          - Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.

                            Cool and Serve:

                              - Allow the crisp to cool for about 10 minutes before serving. This will help the filling set a bit more.

                                - Serve warm, optionally with a scoop of vanilla ice cream or whipped cream on top.
