Ingredients

2 large red onions, thinly sliced

2 tablespoons olive oil

1 tablespoon sumac

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons fresh lemon juice

1 tablespoon chopped fresh parsley (for garnish)

Optional: 1 teaspoon red pepper flakes for heat

Instructions

Prep the Onions: Place the thinly sliced red onions in a medium bowl. If you prefer them milder, soak the onions in cold water for 10-15 minutes, then drain to reduce their sharpness.

Season the Onions: In a small bowl, whisk together the olive oil, sumac, salt, black pepper, and lemon juice until well combined.

Combine: Pour the dressing over the onions and toss to coat evenly. If using, sprinkle the red pepper flakes for added heat and mix again.

Marinate: Let the onions sit for at least 15-20 minutes to allow the flavors to meld. For the best taste, marinate for up to 1 hour at room temperature or in the fridge for a more intense flavor.

Garnish and Serve: Once marinated, transfer the onions to a serving dish, sprinkle chopped parsley on top, and serve as a refreshing side dish, salad topping, or garnish for meats!
