Sweet And Spicy Thai Chicken

Ingredients
  

1 lb chicken thighs, boneless and skinless

3 tablespoons vegetable oil

1/4 cup soy sauce

2 tablespoons brown sugar

2 tablespoons fish sauce

1 tablespoon lime juice

2 tablespoons honey

1 tablespoon red chili flakes (adjust to heat preference)

3 cloves garlic, minced

1 tablespoon ginger, grated

1/2 teaspoon black pepper

1 red bell pepper, sliced

1 green bell pepper, sliced

1 onion, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Cooked jasmine rice, for serving

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together soy sauce, brown sugar, fish sauce, lime juice, honey, red chili flakes, minced garlic, grated ginger, and black pepper. Add the chicken thighs and coat them well. Allow to marinate for at least 30 minutes (or up to 2 hours in the fridge for more flavor).

    Prepare the Vegetables: While the chicken marinates, slice the red and green bell peppers and onion. Set aside.

      Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, remove the chicken from the marinade (reserve the marinade for later) and add the chicken thighs to the pan. Sear the chicken for 5-7 minutes on each side, or until cooked through and a nice golden brown crust forms. Remove the chicken from the pan and set aside.

        Sauté the Vegetables: In the same pan, add the sliced onions and bell peppers. Sauté for 4-5 minutes, until the vegetables are tender-crisp.

          Combine Everything: Lower the heat to medium, return the chicken to the pan, and pour the reserved marinade over the chicken and vegetables. Stir to combine and let it simmer for about 3-4 minutes until the sauce thickens slightly.

            Serve: Remove from heat and garnish with fresh cilantro. Serve hot over cooked jasmine rice with lime wedges on the side.
