1.5 lbs boneless, skinless chicken thighs

2 tablespoons olive oil

1 onion, finely sliced

3 cloves garlic, minced

1 chipotle pepper in adobo sauce, chopped (adjust to taste)

1 tablespoon adobo sauce (from the chipotle can)

1 tablespoon ground cumin

1 teaspoon dried oregano

1 cup chicken broth

Salt and pepper, to taste

Corn or flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sliced avocado (optional)

Crumbled queso fresco (optional)

Instructions
 

Prepare the Chicken: In a large pot, heat the olive oil over medium heat. Add the sliced onions and sauté until they are translucent and slightly caramelized, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Cook the Chicken: Add the chicken thighs to the pot and sear them on both sides for about 5 minutes. Sprinkle in the chopped chipotle pepper, adobo sauce, cumin, oregano, salt, and pepper. Stir to coat the chicken evenly with the spices.

      Simmer: Pour in the chicken broth, bringing the mixture to a gentle simmer. Cover the pot and let it simmer for about 25-30 minutes, or until the chicken is cooked through and tender.

        Shred the Chicken: Once the chicken is cooked, remove it from the pot and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the pot, stirring it into the flavorful sauce.

          Assemble the Tacos: Warm the tortillas on a skillet or grill for about 30 seconds on each side. Spoon the chicken tinga mixture onto the tortillas, adding sliced avocado and crumbled queso fresco if desired.

            Garnish and Serve: Top with fresh cilantro, a squeeze of lime, and serve with lime wedges on the side.
