Ingredients
  

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 tablespoons brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

1 large egg

2 tablespoons melted butter (plus extra for cooking)

1 teaspoon vanilla extract

1/2 cup chocolate chips (semisweet or dark)

Optional toppings: whipped cream, chocolate syrup, fresh berries, sliced bananas

Instructions
 

In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

    In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay. Fold in the chocolate chips.

        Heat a non-stick skillet or griddle over medium heat and add a little butter.

          Once the skillet is hot, pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles start to form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes on the other side until cooked through.

            Repeat with the remaining batter, adding more butter to the skillet as needed.

              Serve the pancakes warm with your choice of toppings such as whipped cream, chocolate syrup, and fresh berries.
