4 boneless, skinless chicken breasts

1 cup fresh pineapple juice

1/2 cup soy sauce

1/4 cup brown sugar

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon ginger, grated

1 tablespoon sesame oil

1/2 teaspoon black pepper

1 teaspoon cornstarch (optional, for thickening)

2 tablespoons water (if using cornstarch)

Fresh cilantro, chopped (for garnish)

Sliced green onions (for garnish)

Cooked jasmine rice (for serving)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine pineapple juice, soy sauce, brown sugar, apple cider vinegar, minced garlic, grated ginger, sesame oil, and black pepper. Whisk until well blended. Add the chicken breasts to the marinade, cover, and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

    Preheat the Grill: Preheat your grill to medium-high heat.

      Grill the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).

        Prepare the Glaze: While the chicken is grilling, pour the remaining marinade into a saucepan. Bring to a boil over medium heat, then reduce to a simmer.
