Ultimate Loaded Potato Meatloaf Recipe

2 lbs ground beef

1 cup mashed potatoes (prepared)

1 cup cheddar cheese, shredded

1/2 cup cooked bacon, crumbled

1 small onion, finely chopped

2 cloves garlic, minced

1/4 cup milk

1/4 cup breadcrumbs

2 large eggs

1 tbsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1 tsp smoked paprika

1/2 cup green onions, sliced (for garnish)

Optional: additional cheese for topping

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large bowl, combine the ground beef, mashed potatoes, cheddar cheese, crumbled bacon, chopped onion, minced garlic, milk, breadcrumbs, eggs, Worcestershire sauce, salt, black pepper, and smoked paprika. Mix well until all ingredients are evenly incorporated.

      Shape the mixture into a loaf on the prepared baking sheet, ensuring it’s even all around. If you prefer a cheesy crust, sprinkle additional cheese on top of the meatloaf.

        Bake the meatloaf in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).

          Once cooked, remove the meatloaf from the oven and let it rest for at least 10 minutes before slicing.

            Garnish with sliced green onions for added freshness and crunch.

              Serve warm with sides of your choice, ideally some extra mashed potatoes or a fresh salad.
