2 cans (15 oz each) white beans (such as cannellini or Great Northern), rinsed and drained

1 cup pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

Fresh basil leaves for garnish

Olive oil for drizzling

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large mixing bowl, combine the rinsed and drained white beans with the minced garlic, dried oregano, red pepper flakes, salt, and pepper. Mix well to ensure the beans are evenly coated with the seasonings.

      Add the pesto to the bean mixture and stir until the beans are thoroughly coated.

        Gently fold in the halved cherry tomatoes, ensuring they are distributed evenly throughout the mixture.

          Pour the white bean and pesto mixture into a greased baking dish (approximately 9x13 inches).

            Top with shredded mozzarella and grated Parmesan cheese, spreading it evenly across the top for a nice cheesy crust.

              Drizzle a little olive oil over the top for extra flavor and moisture.

                Bake in the preheated oven for 25-30 minutes, or until the cheese is golden and bubbly and the dish is heated through.

                  Once out of the oven, allow it to cool for a few minutes. Garnish with fresh basil leaves before serving.
